Certified Organic Garlic Varieties
Most people assume there is only one type of garlic – they are missing out on a whole world of variety! At Forest Farm we are happy to offer a diverse selection of some of the tastiest and most popular varieties available – they include:

PORCELAIN

Porcelains produce huge bulbs with 4-6 rounded cloves enclosed under a satiny white wrapper. Flavours are robust. Well cured bulbs have kept up to 12 months, with 8-9 month storage being the normal.

  • MAJESTIC: Its name describes this outstanding garlic. Developed from a natural mutation, it is most impressive, producing strong plants and large bulbs.
  • GERMAN RED: Developed from a single bulb and improved by the bulbil method. A superb garlic.
  • GEORGIA CRYSTAL: From the Republic of Georgia, long storing, milder flavour than most Porcelains. Smaller bulbs but superb flavour.
  • GEORGIA FIRE: Also from Georgia, this is a full-bodied garlic. Plant is smaller than most Porcelains, but it’s Hot! Great for salsa.
  • POLISH JEN: This giant sized garlic has a medium heat with full flavour and very large individual cloves. Great for pickling.
  • NORTHERN QUEBEC: Good strength, flavour, size, and vigour. Listed in Seeds of Diversity as a heritage variety.

ROCAMBOLE

The Rocamboles are the largest varietal group of hardneck garlics with the greatest range of flavours, bulb sizes and maturity dates. They are the most popular in home gardens, being easy to grow. Bulbs contain 6-11 cloves, under loose wrappers making them easy to peel. Storage life is generally 6-8 months, although some strains have kept as long as 10 months.

  • FRENCH: French chefs recognize the best taste. Good heat. Robust plant producing huge bulbs. Tends to have multiple cloves under single clove wrapper.
  • RUSSIAN RED: Of the many garlic strains called “Russian Red”, this is the original, brought to B.C. by Doukhobor immigrants coming from Russia in the early 1900s. A strong flavoured garlic, giving reliable results for growers.

VARIETY ARTICHOKE ( ALSO CALLED ITALIAN REDS)

Artichoke strains are very vigorous softneck garlics producing large bulbs containing multiple layers of cloves.In northern climates, these softnecks may develop stem bulbils or even bolt to scapes.”Asiatic” garlics are a hardneck version of Artichokes.Softnecks are ideal for braiding into neat “pigtail” braids.

With 8-12 cloves, they take more work to peel but the fine flavours make the extra effort worthwhile. Artichokes are the earliest maturing group, but retain excellent storage length of 9-10 months or more. Easy to grow, the short plants enable closer plant spacing. This, combined with high yield ratios make the Artichokes a profitable garlic for commercial growers.

  • F4 ITALIAN: A dependable softneck from Ted Maczka. Good rich flavour.

GARLIC BRAID PRICING

Garlic braids are the ideal way to store garlic as they allow for maximum air circulation around the bulbs, as well as being an interesting display piece for your kitchen.

  • 20$ for a standard size braid
  • 25$ for a large size braid
  • 30$ for s super size braid
